It's hard to pinpoint a true reason. It's however important to notice that the hardware isn't a problem, as Overwatch is playable in Bootcamp on Macs from 2013: 73FPS on low settings, 25FPS on epic given some benchmarks you can find online. Apple operating systems don't support DirectX and their graphic API isn't up to date nor optimised with GPU drivers. They should have went with OpenGL or Vulkan, but hey, we are talking about Apple here. You can't make it compatible by toggling a switch and recompling it or whatever shenanigan you could imagine. The game would have to re-written for the most part, to get what? 1% more players? Blizzard knows what is going on, they choose not to port Overwatch for a reason.

Ok this is going to sound like a dumb question, but isn't opengl compatible with Macs? Or is it compatible but just not optimized for it? It should be able to run at reduced settings — hey look, the PS4 and Xbox One can run it at the equivalent of 'medium' settings, and they're no more powerful than the 2016 iMacs — but it'll take more work than it would have in the past, because Apple just don't bother with appropriate optimisation any more. Once-upon-a-time they did try to get things optimised as well as possible, so porting was still an additional task but it could be done; these days when you port a game to Mac you have to do all the optimisation yourself. I do think it's bad that a game which can clearly run on the hardware isn't being made available. People who have bootcamped their Macs to run Windows have got the game running just fine, so clearly the hardware can handle it. But I also understand why it's such a pain in the!@#$ to sort out.

I'd expect it to be running on Mac eventually, but I'm not surprised or unsympathetic to Blizzard's delay/lack of interest. It's not like they just choose to not launch on a platform if they could easily do so; Activision Blizzard is not a company which ignores easy money like that. Try bootcamping Windows. Otherwise, consider picking up one of the two consoles, if you can't justify the cost/space of a Windows PC.
